The Manor House conference and training centre in Godalming, Surrey has this month clinched approval for the Vegetarian Society. It’s the latest achievement in the Centre’s comprehensive drive for an enlightened food strategy.
'I am proud to work somewhere where we respect all the food we cook'
Before approving a venue, the Vegetarian Society considers a wide range of factors from the menu options available, to the origin of store cupboard ingredients and policies on food preparation. Ellen Bridges, pastry chef at The Manor House, took the initiative to seek accreditation and explains, 'As a chef and a vegetarian, I’m proud to work somewhere where we respect all the food we cook. We put a great deal of effort and imagination into our vegetarian food and we wanted to promote the fact that we really do our best to look after this frequently neglected group.'
Addressing more than just the meal options, the Manor House - a member of Conference Centres of Excellence - also has a good selection of vegetarian wines, cheeses, cooking oils, breads and only uses free range eggs.
'Starting with the very best ingredients allows us to prepare food simply and deliver delicious menues'
The venue is progressively increasing its commitment to locally–sourced produce. Head Chef Nick Jeffels has established strong links with local suppliers: some of its beef, for example, comes from an award winning, traditionally reared Aberdeen Angus herd less than three miles away. 'The sort of quality we get from local farms is outstanding and starting with the very best ingredients allows us to prepare food simply and deliver delicious menus,' comments Nick.
Sourcing local produce for kitchen isn’t the only area where The Manor House team is taking steps to benefit the environment. Having introduced a range of ‘green’ initiatives in recent years, 2008 will see The Manor House working towards achieving accreditation from the Green Tourism Business Scheme. The scheme helps businesses in the tourism industry to focus on addressing a wide range of sustainability issues from energy and water efficiency to waste management, biodiversity and more.
